Ezio is an expert on the uncommon cult winemaking techniques such as using tiny open top fermenters, manual cap push downs on Bordeaux varietals, partial native yeast fermentation, gravity flow, tiny hand cranked wine basket presses, shoulder removal of all cabernet clusters, cluster sovereignty on the vine, vast hours of manual labour, an amazing palette, vinification into tiny lots and perfect oak management round out the many reasons why Ezio Minutello is the Winemaker.
Ezio produces wines of distinction from fruit grown in three of Victoria’s premium cool climate wine regions.
We like to say we make our wines in the vineyard, in other words we strive to produce the highest quality fruit possible. To achieve this we pay attention to every detail such as yield regulation through pruning and crop removal. In these cool climate areas sunlight intercept is vital so all our vineyards are trained using vertical shoot positioning. Combined with shoot removal and regular trimming we achieve a very open canopy. This combination of low crops and maximum sunlight exposure results in consistently high quality fruit no matter what the seasonal conditions are.
Mount Beauty Vineyard
Nestled on the northern slopes of Victoria’s Mount Beauty at an altitude of 600 metres above sea level is the site of our first vineyard. This is one of the highest vineyards in Victoria. Here the combination of cool climate and red volcanic soil results in wines with a great depth of flavour and structure.
The vineyard consists of approximately 85 acres of a combination of Cabernet Sauvignon, Shiraz, Pinot Noir, Merlot, Chardonnay and Pinot Grigio. This vineyard is situated at Tawonga South in the morning shadow of Mount Bogong in the Alpine Valley region of Northeast Victoria.
At an altitude of 600 metres high, this is one of the highest vineyards in Victoria. The climate and soil is comparable to the best wine growing areas in Europe. In addition to this, clean water and clear air coupled with very cold winters, hot summer days and cool nights make for intensely flavoured high quality grapes.

The soil type is a-strata 6, duplex soil clay loam. These soils are found on very ancient river terraces, and in some areas are overlain with colluvial material. They are strongly structured, self mulching surfaces with calcareous subsoils. These soils store and retain water for great periods, due to their greater depth and high clay content. Our soils are also reasonably permeable due to the strong soil structure and lack of surface sealing tendencies. This means our vineyard has excellent water holding capacity and require minimum to nil irrigation.

Hidden Valley Estate from our Mount Beauty vineyards produces high quality, unique, cool climate wines. The fruit takes longer to ripen and harvest is later than in warm climates, which allows it time to develop intense flavours. The aim is to express the natural flavours and colours of the fruit, so the style is fresh and elegant, with very little wood or treatment.
